Step by Step Instructions
- Step 1: Clean and wash the endives well and immerse them in boiled hot water for 5 minutes.
- Step 2: Heat the olive oil and cook the meat on medium heat for 5-8 minutes until golden brown. Pour in the wine, wait until the alcohol evaporates and add some salt and one and a half glasses of water. Cover and simmer for approximately 30 minutes.
- Step 3: Combine the endives to the meat and stir. Cover the saucepan and leave the food to simmer on low heat for approximately 20 minutes.
- Step 4: Add the olives and the lemon verbena and stir. Taste a bit to check if more salt or pepper is required and cook the food for approximately another 3 minutes.
- Step 5: Serve hot in a deep platter.
