Step by Step Instructions
- Step 1: Place the mushrooms in water to soften.
- Step 2: Sauté the onions, mushrooms and carrot in a frying pan with 2 tablespoons of olive oil.
- Step 3: Place the flour in a bowl and add as much beer as necessary to form a stiffish batter.
- Step 4: Add the vegetables, the pulped potato, salt, pepper and mint to the flour mixture. Knead well and shape into patties.
- Step 5: Smear the bottom of a baking pan with the rest of the olive oil and bake the patties at 150 degrees, until golden brown.
- Step 6: Serve the vegetable patties hot or cold with a green salad on the side.

- 5 spring onions - finely chopped
- ½ cup dried porcini mushrooms
- 1 grated carrot
- 1 small boiled potato
- 280g flour
- 1 small can of beer
- salt
- finely chopped mint
