Step by Step Instructions
  • Step 1: Cut the aubergines in 2cm cubes.
  • Step 2: Heat the olive oil in a large frying pan and cook the aubergines on medium heat for about 10', mixing often until tender and golden brown.
  • Step 3: Allow the aubergines to drain their excess oil on a kitchen roll before seasoning them with salt.
  • Step 4: Put the aubergine cubes in a bowl, add the rest of the ingredients and pour the oil and lemon dressing over the salad.

  • 70ml extra virgin, orgranic olive oil
  • 1.5 lemon (zest and juice)
  • 30g Capers
  • 10 green olives without kernel
  • 30g parsley (finely chopped)
  • 10g onion (finely chopped)
  • 5g garlic (finely chopped)
  • salt
  • ground black pepper
