Step by Step Instructions
- Step 1: Prepare the rice pudding. Place the rice and the water in a saucepan and wait until the water starts boiling. Lower the heat and cook for 15 minutes.
- Step 2: Place the eggs, the milk, the sugar, the salt, the mastiha and finally the raisins in a bowl, and stir well until the sugar melts.
- Step 3: Add the boiled rice, mix well and empty the mixture into a 20cm x 30cm pyrex dish.
- Step 4: Bake in a preheated oven at 160°C for approximately 20 minutes until the mixture has set.
- Step 5: Remove the rice pudding from the oven, and set aside to cool for 10 minutes.
- Step 6: Serve with one spoonful of sour cherry jam and sprinkle with some cinnamon.

- 1/4 tsp mastiha powder - cooking use
- 1/2 tsp salt
- 80g blonde raisins
- 1 tsp cinnamon
- 1 orange (zest)
- 240g sour cherry jam
- 500ml milk
