Product Description
Natural unprocessed salt is a treasure of the Messolonghi lagoon. The production season starts in March-April. The seawater is channeled to the preheaters of the salt pans, areas that are properly designed for the storage and isolation of seawater. During spring and summer the water heats up and dries slowly, while in certain density conditions it is transferred from one heater to another. In this way insoluble materials and unnecessary salts that are produced while the sea dries are removed. At the end of the summer, the salt-saturated sea water is transferred to the alopecia (or "pans" for the locals) where it is left to dry. After collection, the salt will be washed with brine to maintain its physical and chemical characteristics. What will come out of the wash is pure, natural salt that retains all its flavor and the approximately 88 trace elements, necessary for health and in harmonious proportions for the body.

In its natural , unprocessed form, it contains sodium and various minerals, making it an excellent source of minerals and trace elements for the human body. It can be found in abundance in Greece, thanks to the country's huge coastline and water sources.

Mesologgi
The town of Mesologgi is the capital of Aetolia-Acarnania regional unit an it is known as the site of a dramatic siege during the Greek War of Independence, and of the death of poet Lord Byron. The town is located between the Acheloos and the Evinos rivers and has a port on the Gulf of Patras. It trades in fish, wine, and tobacco. Summers are long, hot and humid, with temperatures often surpassing 40°C and remaining above 25°C even at night. Winters are short and mild with frequent rainfalls. Mesologgi was first mentioned by a Venetian called Paruta when he was describing the naval Battle of Lepanto near Nafpaktos. According to predominant historical opinion, its name came from the combination of two Italian words, mezzo and laghi which means "in the middle of lakes" or messo and laghi (Messolaghi) which means "a place surrounded by lakes".
