Step by Step Instructions
  • Step 1: Soak the chickpeas in water overnight.
  • Step 2: Boil the chickpeas in a saucepan with plenty of water, until soft. Strain and set aside to cool.
  • Step 3: Place the boiled chickpeas, peppers, parsley, olives, salt, lemon juice and olive oil in a deep bowl.
  • Step 4: Mix well and sprinkle with crumbled feta cheese.
  • Step 5: Serve in a deep bowl.
