Step by Step Instructions
- Step 1: Beat the butter very well until frothy and white, add the sugar and continue beating.
- Step 2: Once the butter and sugar have been well combined, mix in the egg yolks, one at a time, the brandy and then the cinnamon. Continue beating and mix well.
- Step 3: Add the almonds and the flour.
- Step 4: Shape in rounds and bake at 180 °C, until golden brown. When cool, sprinkle with icing sugar.
- Step 5: Arrange the shortbread biscuits in a tower on a round platter.

- 600g whole almonds with skin
- 600g butter
- 2 egg yolks
- 250g caster sugar
- 900g flour
- 2tbsps of ground cinnamon
- 1 espresso cup of brandy
- 2kg icing sugar (for the coating)
