Step by Step Instructions
  • Step 1: Prepare the pie. Pour the olive oil in a saucepan, add the onion, the zucchini and the carrot and sauté for 5 minutes until the vegetables soften and they are golden brown. Then add the cabbage and sauté for 10-15 minutes until it is very soft. Remove the saucepan from the heat and wait for 15 minutes for the vegetables to cool.
  • Step 2: Empty the contents of the saucepan into a big bowl and add salt, pepper, the parsley, the spearmint, the rice, the eggs, the milk, the flour, the baking powder and the manouri cheese which you have previously crumbed up, using your fingers. Mix all the ingredients very well and empty the mixture into a buttered rectangular baking pan. Bake in preheated oven at 180°C for approximately 45-50 minutes, until the vegetables are cooked and the pie sets.
  • Step 3: Remove the pie from the oven, wait for 10 minutes for it to cool down a bit before you dish it out.
