The soil composition and geomorphology, along with the ideal climate conditions which characterise the island of Aegina, all contribute to the excellent flavour and aroma of its pistachios. It comes as no surprise, therefore, that the pistachios from Aegina, are ranked amongst the world's top quality pistachios. Enjoy these exquisite and tasty pistachios on their own as a snack or as an accompaniment to a drink. Try them in a biscuit or cake recipe, sprinkle a handfull in green salads and also try adding some to a herbal pesto sauce. Historians inform us that the pistachio trees have been cultivated in Aegina since 1860 and this practice slowly spread throughout Greece. The variety "Aegina", named after the beautiful island in the Saronic Gulf, offers a nut of supreme quality and taste. The EEC, having recognized this, has granted the island of Aegina the exclusive right to use the name "AEGINA PISTACHIOS" in order to differentiate them from pistachios produced in other regions. Pistachios are classified as "superfoods", i.e. as food containing many beneficial to the health ingredients, and are hence considered a snack of high nutritional value. The pistachios are a valuable source of energy and they are rich in good monounsaturated fatty acids, fibre, vitamins, minerals and antioxidant ingredients. Aegina pistachios, if appropriately consumed, provide protection against premature ageing and cardiovascular diseases.

Product History
Nuts and dried fruit are products of high nutritional value. Plain as a snack, in breakfast cereal or mixed in salads, they complement a daily diet of high nutritional value. The island of Aegina is characterized by its permanent historical presence in Greece, as it has been continuously inhabited since 3500 BC. During the archaic period, it prospered along with the development of shipping, trade and the arts- more precisely, with architecture and sculpture. Later on, it suffered periods of turmoil, caused not only by the Greeks but also by foreign conquerors - it was bequeathed to the Romans by the state of Pergamon and it then also suffered in the hands of Saracen pirates. Aegina was later occupied by the Franks, Catalans, Venetians and the Turks. During the years after the Ottoman Occupation, it grew into a political, administrative, economic and cultural centre of modern Greece. Nowadays, Aegina is a lively island, just a short distance from Athens and the port of Pireaus. With its rich tourism infrastructure, many attractions, ancient monuments, monasteries, picturesque stone villages, pine forests, beautiful beaches and ecological pathways, this island challenges and invites us all to explore each and every corner of it.
