Step by Step Instructions
- Step 1: Wash, stem and cut the vegetables. Sauté the onions in olive oil until golden brown, add the potatoes, a glass of water and simmer for 10 minutes.
- Step 2: Add the aubergines, the zucchini, parsley, tomatoes and another glass of water. Mix the food and continue cooking for another 15΄.
- Step 3: Lastly, add the aubergine and tomato pastes, season with salt and pepper and cook until the potatoes start breaking apart, creating a thick and rich sauce.
