Step by Step Instructions
- Step 1: Pour 2 spoonfuls of olive oil in a big frying pan and sauté the onion until soft.
- Step 2: Add the tomatoes and green peppers and cook on medium heat, stirring continuously and lightly using a wooden ladle until all excess liquid evaporates.
- Step 3: Beat the eggs in a bowl, add the mizithra cheese, the herbs, capers, salt, pepper and the remainder of the olive oil. Mix the ingredients well and pour the mixture into a frying pan stirring lightly for 5 minutes.
