Pasta & Legumes

The history of pasta is told as a tale of different peoples (Italians, Greeks, Chinese, Arabs) trying to claim the paternity. And of course, pasta, in modern days, has become a staple food of Italy. In Greece, we find the first pasta reference back in 1.000 B.C. It was a flat dough of flour and water called “laganon“ (noodle), which Greeks took with them when the first colonies in Italy were established . Pasta is a key part of the Mediterranean Diet. It is rich in complex carbohydrates, iron, selenium, calcium, protein and B vitamins while at the same time, it's fat, cholesterol and sodium free. It fuels the human body with energy and important nutrients. Along with rice and legumes, they form the base of the Pyramid of Mediterranean Diet.
