Step by Step Instructions
  • Step 1: Prepare the hare. Heat the olive oil in a saucepan and add the small onions, sauté for 6-7 minutes until they soften slightly and are golden brown. Remove the onions from the saucepan and set aside.
  • Step 2: Place the chopped onion and the garlic in the saucepan and sauté for 5 minutes until they soften. Add the hare and sauté for 6-7 minutes until golden brown on all sides. Pour in the wine and wait for 1 minute until it evaporates. Then add the orange juice, the tomato sauce, the salt, the pepper, the sugar, the rosemary, the cinnamon and the allspice and let it boil.
  • Step 3: Remove the contents from the saucepan and put them in a ceramic ovenproof dish. Add the small sautéed onions and the bay leaves and bake in preheated oven at 180°C for approximately 1 hour until the hare softens to the point where it separates from its bones.
  • Step 4: Serve piping hot!

  • 1 large onion (finely chopped)
  • 3tsp garlic paste with olive oil
  • 150g extra virgin olive oil
  • 100g orange juice
  • 200ml red wine
  • 300g fresh tomato sauce
  • 1tbsp rosemary
  • 2 cinnamon sticks
  • 10 allspice grains
  • salt
  • ground black pepper
  • 3 bay leaves
  • 1tsp sugar
