Step by Step Instructions
- Step 1: Using a knife, carefully make tiny slits in the meat at random and put a clove of garlic and some salt and pepper inside each.
- Step 2: Heat the olive oil in a large and wide saucepan and brown the meat on all sides. Pour in the wine and boil for 5 minutes so that the alcohol evaporates.
- Step 3: Add the tomatoes, tomato paste and bay leaves and cover the saucepan with the lid. Simmer on low heat for approximately 1 ½ hour. If required, top up with some hot water.
- Step 4: Cook the pasta in a different saucepan with abundant salted water and drain when ready.
- Step 5: When the meat is ready remove it from the saucepan and allow it to cool before cutting it into slices.
- Step 6: Serve the meat combining it with the handmade pasta and drizzle with the sauce.
