Step by Step Instructions
Prepare Dough
- Step 1 :In a large bowl whisk together the sugar, baking powder and flour.
- Step 2 :Add the oil, yoghurt, eggs and brandy, mixing as you go along and a dough forms.
- Step 3 :Knead the dough for approximately 10 minutes until smooth and set aside to rest.
Prepare Filling
- Step 1 :In a separate bowl, mix together the cheese, cinnamon, sugar, egg yolk, orange peel and flour until well blended.
For Pastry
- Step 1 :On a floured surface, roll out a piece of dough until about 1/8 of an inch thick, using a 3-4 inch biscuit cutter cut out circles and set aside.
- Step 2 :Place a spoonful of the cheese mixture into the center of the dough circle and spread out close to the edges.
- Step 3 :Raise the rim of the dough up and around the cheese and pinch the edges to pull the dough in around the cheese, leaving the center open so the cheese is visible.
- Step 4 :Repeat using all of the dough and filling. Place on a baking sheet and brush lightly with the egg. Bake at 350 degrees for approximately 20 minutes until lightly golden brown.
- Step 5 :Springly lightly with cinnamon.
- Step 6 :Serve and enjoy!

For The Dough
- ¼cup olive oil
- ¼cup sugar
- ¼cup plain greek yogurt
- 1 egg ,beaten
- ½teaspoon baking powder
- 1 1/3cups all purpose flour
- 1/8cup brandy
For The Filling
- ¾pounds fresh soft myzithra cheese (ricotta may be substituted)
- ½teaspoon ground cinnamon
- 1tablespoon sugar
- ½ eggs yolk
- ½teaspoon grated orange peel
- 1tablespoon all purpose flour
- 1 egg , beaten (for glaze)
