Step by Step Instructions
- Step 1: Prepare the potatoes. Heat the olive oil in a saucepan and add the onion, the garlic and the celery and sauté for 5-6 minutes until the vegetables soften and are golden brown. Then add the potatoes and sauté very well for approximately 10 minutes, stirring periodically until golden brown.
- Step 2: Finally add the fresh tomato sauce, the salt, the pepper, the oregano, the tarragon, the bay leaves, the sugar, the sun-dried tomato paste and 1 1/2 glass of water. Mix and cook for approximately 40 minutes, until the potatoes are ready.
- Step 3: Remove the saucepan from the heat and wait for 10 minutes until your meal cools a bit.
