Step by Step Instructions
For fish
- Step 1 :Thinly slice fish fillets and place on shallow plate
- Step 2 :Top with orange and lemon zest and juice of both the lemon and orange
- Step 3 :Season with salt and pepper
- Step 4 :Drizzle well with olive oil
- Step 5 :Spoon the sauce over the fish several times and set aside
For the coleslaw
- Step 1 :Thinly slice the cabbace and place in large mixing bowl.
- Step 2 :Season with salt and gently massage the cabbace for 2-3 minutes to help break it down
- Step 3 :Thinly julienne the green apple and mint and add to cabbage
- Step 4 :Add the yogurt, mayonnaise and season with pepper
- Step 5 :Mix well and check for seasonings
- Step 6 :Place coleslaw on serving platter, top with the fish ceviche and garnish with chopped chives and olive oil.

- 1 striped sea bass filleted
- 1 orange
- 1 lemon
- 1 bunch chives

- ½ Head Cabbage
- 1 Green Onion
- 1 Bunch Mint
- ½ Cup Mayonnaise
- 1 Cup Greek Yogurt
- Salt & Pepper to Taste
