Step by Step Instructions
- Step 1 :Pre-heat oven to 400 degrees.
- Step 2 :Season the oxtail with salt and pepper. In oven proof heavy bottom saucepan or Dutch oven, over medium high heat add olive oil, add oxtail and sear until golden brown on all sides.
- Step 3 :Add onion, garlic, star anise, tomato paste, beef broth and stir well.
- Step 4 :Cover and place in oven for 30 minutes at 400 degrees. At end of 30 minutes reduce oven temperature to 300 and continue cooking for 2 ½ hours until oxtail is fork tender.
- Step 5 :Remove oxtail from cooking liquid, return saucepan to burner over medium heat to bring liquid to a simmer.
- Step 6 :De-bone oxtail and add meat to liquid along with black-eyed peas to cook for an additional 2-3 minutes.
- Step 7 :Cut pita pockets in quarters and place in oven to heat through
- Step 8 :Fill pita with oxtail, season with red pepper flakes if desired.

- 1 hot chili pepper, sliced
