Step by Step Instructions
- Step 1 :Place ingredients in a dressing bottle or small jar with lid and shake vigorously.
- Step 2 :In medium skillet over medium high heat add 1 tablespoon of olive and pancetta and cook for 3-4 minutes or until pancetta is crispy.
- Step 3 :Remove skillet from heat, add spinach and chick peas and mix well.
- Step 4 :Place mixture on serving plate, top with arugula and trahana.
- Step 5 :Drizzle with vinaigrette and enjoy!

For Salad:
- 3ounces pancetta, cubed
- 2cups baby arugulas
- 2cups baby spinach
- 1cup chick peas
- 2tablespoons trahana
- 1tablespoon olive oil
- 9tablespoons olive oil
- 3tablespoons balsamic vinegar
- Zest of ½ large orange
- ½teaspoon dijon mustard
- 2tablespoons water
- salt & pepper to taste
