Step by Step Instructions
- Step 1: Prepare the filling. Heat the 100g of olive oil in a saucepan. Add the leek, the carrot, the onion, the salt and the pepper and sauté for 6-7 minutes, until they soften. Remove from the heat and add the herbs, the oats, the eggs and the cheese. Mix very well and set aside.
- Step 2: Prepare the pie. Grease a rectangular baking pan and line it with a sheet of puff pastry, spread the filling evenly and cover with the second sheet of puff pastry. Seal the sides, carve, grease the surface and sprinkle with the black sesame seeds. Bake in preheated oven at 180°C for approximately 50 minutes, until the puff pastry is baked, becomes crispy and gets a nice golden brown colour.
- Step 3: Remove the pie from the oven, wait for 20 minutes and then cut and serve.

- 1Kg leeks (thinly sliced)
- 5 spring onions (sliced)
- 2 carrots (grated)
- 1/2 bunch of parsley (finely chopped)
- 1/2 bunch of dill (finely chopped)
- 1/2 bunch of chervil (finely chopped)
- 3 eggs
- 300g kalathaki cheese from Lemnos (crumbed)
- 4tbsp ground oats
- 150ml extra virgin olive oil
- 20g black sesame seeds
- salt
- ground black pepper
