Step by Step Instructions
For the Calamari
  • Step 1 :Wash and clean the calamari and add to a small covered saucepan, with no water and cook over a medium heat.
  • Step 2 :As the calamari cooks it will release its natural juices.
  • Step 3 :Cook until all of the natural juices have evaporated, add 1 cup of white wine and cook off until evaporated.
  • Step 4 :In a separate saucepan, heat the olive oil, add the finely chopped yellow onion and cook until translucent.
  • Step 5 :Add the calamari and cook for approximately 5 minutes and top off with the remaining cup of white wine.
  • Step 6 :Season with salt, pepper, rosemary and thyme and mix well.
  • Step 7 :Add the grated fresh tomatoes and sugar, mix well and simmer until most of the liquids have evaporated.
For Orzo:
  • Step 1 :In a deep skillet sauté the green onion in olive oil until softened.
  • Step 2 :Add the white wine and orzo and stir with a wooden spoon.
  • Step 3 :Slowly add water and stir continuously so that the orzo does not stick.
  • Step 4 :You will continue to slowly add water until the orzo is done.
  • Step 5 :This orzo recipe is cooked in the same way as you would cook risotto.
  • Step 6 :Season with salt and pepper and add the saffron. Continue to cook slowly until the orzo is cooked through.
  • Step 7 :Remove from heat and add the butter and cheese and mix well.
  • Step 8 :Plate the orzo and top with the cooked calamari and its sauce.
  • Step 9 :Enjoy!

For orzo:
  • (1/2 lb) orzo
  • 2 green onions chopped finely
  • 1tablespoon olive oil
  • 4-5pieces of saffron
  • 1cup white wine
  • 1tablespoon butter
  • 2 ½tablespoons parmesan cheese
  • 1small yellow onion finely diced
Preparation of calamari (squid):
  • 2pieces of squid approximately 1/2 lb
  • olive oil
  • 1 yellow onion grated
  • 2cups white wine divided
  • 2-3 fresh tomatoes , grated
  • ½ teaspoon sugar
  • ½ teaspoon rosemary
  • ½ teaspoon thyme
  • salt & pepper to Taste

We ship in the USA, US territories, Canada and Puerto Rico. For deliveries to other countries please select the option "Shipping To" and choose from the available countries. Your order will arrive within 1-7 business days by UPS or USPS, depending on the kind of service you will choose, (Ground Shipping, 2 Days Delivery, Next Day Delivery). All of our in stock products are immediately shipped within the same business working day (Monday to Friday, excluding National Holidays) if order is placed before 17:00 CDT (UTC/GMT -5 hours). Orders can be also shipped to a P.O. Box or APO/FPO. In the case of P.O. Box, delivery will take longer than 7 days and in the case of APO/FPO, the delivery time is 4-6 weeks. Please note that all orders including perishable items are automatically shipped using 2 Days Delivery or Next Day Delivery (working days Monday to Friday) to ensure your product arrives in superb condition (Ground Shipping is not available as an option).
