Step by Step Instructions
- Step 1: Finely chop the sun-dried tomatoes and place them in a bowl. Add the manouri cheese and olive oil. Mix all the ingredients well.
- Step 2: Combine the olive oil with the vinegar in a different bowl. Whisk together using an egg whisk. Add the finely chopped parsley.
- Step 3: Slice the aubergines, sprinkle with olive oil and grill them.
- Step 4: Stuff each aubergine slice with the sun-dried tomato mixture and wrap them in rolls.
- Step 5: Gently place the rolls in a platter and drizzle with the dressing.
