Step by Step Instructions
- Step 1: Prepare the chicken. Place the chicken on a baking pan. Sprinkle with salt, pepper, 2 tbsp of thyme and paprika. Pour half of the quantity of the olive oil in another bowl, add the wine, the juice of 1 orange, the lemon juice, 1 tbsp of mustard and mix very well. Pour this mixture over the chicken and mix well, so that it coats the chicken all over. Bake in preheated oven at 180°C for approximately 40 minutes, until it is cooked on the inside and a crispy crust is formed on the outside.
- Step 2: Prepare the orange sauce. Heat the rest of the olive oil in a big frying pan, add the spring onion and sauté for 5 minutes until it softens. Pour in the rest of the wine and wait for one minute until it evaporates. Add the rest of the orange juice, the zest, 2 tbsp of mustard, the orange jam, some salt, the pepper, the elixir and the rest of the thyme. Cook on medium heat for approximately 10 minutes until the sauce thickens.
- Step 3: Arrange the chicken drumsticks on a platter, pour the orange sauce over them and serve.
