Step by Step Instructions
- Step 1 :Clean and devein the shrimp reserving the shells and heads.
- Step 2 :In a large saucepan over medium heat, saute the shrimp, shells, heads and tails with olive oil for approximately 3 minutes, or until shrimp is cooked through. Remove shrimp and set aside. Add the diced onion, tomato paste and vanilla and continue to saute.
- Step 3 :Add the wine and cognac and continue cooking for 2 minutes, add the beef stock and bring to a boil for approximately 5 minutes.
- Step 4 :Remove from burner and strain broth to remove shells.
- Step 5 :Return stock to burner and bring to a boil. Add pasta and cook until done.
- Step 6 :Remove from burner, stir in grated orange, tomatoes and basil.
- Step 7 :Place in serving bowls and top with reserved shrimp.

- 1 1/3 pounds shrimp
- 1 Cup Cherry tomatoes
- 5 Basil leaves
- ½ yellow onion, finely diced
- 1 tablespoon tomato paste
- 1 shot glass cognac
- ¾ Cup beef stock
- 1 glass white wine
- 1 vanilla bean
- Grated rind of ½ an range
- ¼ Cup Olive oil
- Salt & Pepper
- 2 Cups Hilopites Pasta
