Step by Step Instructions
- Step 1 :In a deep skillet on high heat, add the olive oil and cook off the sausages (approximately 4 minutes).
- Step 2 :Remove the sausages. In the same pan add the peppers, onions and garlic.
- Step 3 :Sweat down the vegetables over a medium-high heat for approximately 5 minutes.
- Step 4 :Add the tomato and sausages, mix well and simmer for approximately 30 minutes.
- Step 5 :Serve with rice
- Step 6 :Enjoy!

- 3 sausages , slice ½ inch pieces
- 5 green peppers , sliced
- 2 yellow onions , sliced
- 1 red pepper , sliced
- 4-5 tomatoes (skin off, and grated)
- 3 garlic cloves , chopped
- 2tablespoons extra virgin olive oil
- salt & pepper to taste
