Step by Step Instructions
- Step 1: Place the butter, flour, egg yolks, salt, rosewater and half a glass of water in the bowl of the electric mixer and beat for a few minutes, until all the ingredients are combined together. Continue mixing the dough for approximately 4 minutes, until it becomes smooth and homogeneous.
- Step 2: Remove the dough from the bowl and place it on a floured surface. Knead it using your hands. Divide the dough into small pieces and roll them out to dimensions of about 4 mm thickness and 7x14cm.
- Step 3: Spoon some filling in the middle and roll cylindrically like a cigar. Seal the ends by pressing together using a fork, fry in very hot olive oil until golden brown on all sides. While hot, dip them into cold syrup for only one minute.
- Step 4: Serve by first garnishing them with some fig jam and dusting with ground cinnamon.

- 350g crushed almonds - for the filling

- 1tsp of rosewater
- 1 and 1/2cup of sugar - for the syrup
- 1cup of water
- 1 whole cinnamon sticks
- 2cups of extra virgin olive oil
