Step by Step Instructions
- Step 1: Prepare the tagliatelle. Put the pasta in boiling water, to which salt has been added and boil for 6-7 minutes. Drain and cool off under plenty of water. Set aside.
- Step 2: Prepare the sauce. Heat the olive oil in a big frying pan, add the spring onions and the leeks and sauté for 5-6 minutes, until they soften. Pour in the wine and wait for 1 minute until the alcohol evaporates. Add the xinomizithra, the salt, the pepper and the oregano and mix. Wait for 2-3 minutes until the sauce starts to thicken.
- Step 3: Once the sauce thickens, add the pasta, the lemon zest, mix well and serve.
