Step by Step Instructions
- Step 1: Heat the olive oil in a saucepan, add the aubergines and then the dried onions. Cook until soft.
- Step 2: Add the frumenty and mix the mixture using a wooden ladle.
- Step 3: Pour the water in the saucepan and wait until the frumenty is well cooked.
- Step 4: Remove the saucepan from the stove and add the manouri cheese, mint and salt.
- Step 5: Prepare the pies.
- Step 6: Cut the pie dough into rounds using a dough cutter. Place some of the mixture in the centre of the round and dot the edges with a little egg yolk using a pastry brush. Fold the dough over into a half-moon shape and seal it by pressing edges together. Repeat these steps for all pies.
- Step 7: Fry the pies in hot olive oil, until light brown.
- Step 8: Serve on a wide platter.

- 300g aubergines, cubed
- 200g dried onions, finely chopped
- 100g manouri cheese
- 20 fresh mint leaves
- 100g sweet frumenty
- 100ml extra virgin olive oil
- 1L water
- 1 egg yolk
