Step by Step Instructions
  • Step 1: Boil the soaked chickpeas, together with the bay leaves, in salted water for 20 - 30 minutes and strain.
  • Step 2: Finely chop the vegetables and herbs.
  • Step 3: Mash the chickpeas in a food processor.
  • Step 4: Combine the chickpea paste with the vegetables, herbs, flour, salt and pepper in a large bowl and mix well.
  • Step 5: Add about 250 ml of cold water. Knead well using your hands until the dough becomes firm and does not stick to the hands.
  • Step 6: Pour the olive oil in a deep frying pan and heat well. Shape the chickpea mixture into relatively big and flattish patties.
  • Step 7: Fry the chickpea patties until light brown and serve in a platter.

  • 2 dried onions - mashed
  • 2/3 spring onions - finely chopped
  • ½ bunch mint - finely chopped
  • ½ bunch parsley - finely chopped
  • 220g flour
  • bunch marjoram - finely chopped
  • 2 laurel leaves
  • 1tsp baking soda
  • salt
  • ground black pepper
  • olive oil for the frying part
