Step by Step Instructions
- Step 1: Boil the soaked chickpeas, together with the bay leaves, in salted water for 20 - 30 minutes and strain.
- Step 2: Finely chop the vegetables and herbs.
- Step 3: Mash the chickpeas in a food processor.
- Step 4: Combine the chickpea paste with the vegetables, herbs, flour, salt and pepper in a large bowl and mix well.
- Step 5: Add about 250 ml of cold water. Knead well using your hands until the dough becomes firm and does not stick to the hands.
- Step 6: Pour the olive oil in a deep frying pan and heat well. Shape the chickpea mixture into relatively big and flattish patties.
- Step 7: Fry the chickpea patties until light brown and serve in a platter.

- bunch marjoram - finely chopped
