Step by Step Instructions
  • Step 1: Preheat the oven to 150 degrees - using the fan control.
  • Step 2: Boil the artichokes in a saucepan with in salted water and lemon for 10 minutes until soft. Drain the artichokes and cut into slices.
  • Step 3: Fry the artichokes in a frying pan with 2 tablespoons of olive oil until golden brown.
  • Step 4: Beat the eggs with salt and pepper in a bowl.
  • Step 5: Smear an ovenproof pan with 2 tablespoons of olive oil and lay the artichokes on it, add the smoked pork and manouri cheese. Pour the beaten eggs over the ingredients.
  • Step 6: Bake in preheated oven for 15 minutes.
  • Step 7: While still hot, cut the omelette in pieces and serve.

  • 4tbsp extra virgin olive oil
  • 4 eggs
  • 150g sliced syglino
  • 200g cubed manouri cheese
  • a bit of dill - finely chopped
  • salt
  • ground black pepper
