Step by Step Instructions
- Step 1: Preheat the oven to 150 degrees - using the fan control.
- Step 2: Boil the artichokes in a saucepan with in salted water and lemon for 10 minutes until soft. Drain the artichokes and cut into slices.
- Step 3: Fry the artichokes in a frying pan with 2 tablespoons of olive oil until golden brown.
- Step 4: Beat the eggs with salt and pepper in a bowl.
- Step 5: Smear an ovenproof pan with 2 tablespoons of olive oil and lay the artichokes on it, add the smoked pork and manouri cheese. Pour the beaten eggs over the ingredients.
- Step 6: Bake in preheated oven for 15 minutes.
- Step 7: While still hot, cut the omelette in pieces and serve.

- 200g cubed manouri cheese
- a bit of dill - finely chopped
