THALLON is a high quality organic, early harvest extra virgin olive oil, with health claim (high content of polyphenols) from single-variety CHONDOLIA HALKIDIKI, with rich flavor profile (FRUIT 5.5Mf, PUNGENT 6.5Mb and BITTER of 5mp), low acidity <0.3% and high concentration in VITAMIN E. Thallon has a Health Claim, due to the high concentration of polyphenols. According to the European Food Safety Authority (EFSA) and European Regulation 432/2012 THALLON early harvest olive oil has all the taste characteristics of the Chondrolia Chalkidiki variety, which is rich fruity taste with aromatic notes of grass, greens, pepper, tomato and balanced the bitter and spicy (FRUIT 5.5Mf, PUNGIT 6.5.0MB and B5). THALLON is a limited and specific crop, as every year during production, all of it is stored in a large tank, from where we send a sample for chemical analysis, organoleptic, taste tests and international taste competitions.
