Step by Step Instructions
  • Step 1: Sauté the onion and peppers in a wide saucepan with olive oil. Pour in the wine and allow the alcohol to evaporate.
  • Step 2: Add the grated tomato, the cauliflower and pour water until the ingredients are covered. Season with salt and pepper and cook on medium heat for approximately 25 minutes, until the sauce thickens.
  • Step 3: Place the cauliflower in tomato sauce in an ovenproof pan, sprinkle with grated gruyère cheese and grill until the cheese melts.
  • Step 4: Serve piping hot in a deep platter.

  • 1 Florina pepper - finely chopped
  • 400g grated tomato
  • 3tbsps extra virgin olive oil
  • 80ml white wine

  • 200g thickly grated gruyere cheese
  • ground black pepper
  • water
