Step by Step Instructions
- Step 1: Mix the tomatoes, eggs, bread crumbs, feta and melichloro cheese, the vegetables and the herbs in a bowl and use your hands to knead the mixture.
- Step 2: Shape into patties, coat with flour and fry in very hot oil.
- Step 3: Serve the tomato fritters hot on a wide platter.
Ingredient List
- 2 cloves of garlic
- 2 onions - finely chopped
- ½bunch parsley - finely chopped
- 150g flour (for coating)
- 500ml extra virgin olive oil (for frying)
- 2kg ripe tomatoes - drained and cut into small pieces
- 5 eggs
- 200g bread crumbs
- 400g feta cheese
- 250g melichloro cheese
- 150ml extra virgin, organic olive oil
- 10 leaves of fresh mint - finely chopped
