Step by Step Instructions
- Step 1: Sauté the chicken and the onion with the olive oil until light brown, pour in the wine, add 2 glasses of water, cover and simmer for approximately 30-35 minutes.
- Step 2: Add the potatoes, top up with some more water and continue cooking for another 15 minutes.
- Step 3: Combine the zucchini, arugula, tomatoes, sun-dried tomato paste, salt, pepper and mix.
- Step 4: Cook for another 30-35 minutes and serve.
