Step by Step Instructions
- Step 1: Prepare the salad. Place the greens in a salad bowl and set aside.
- Step 2: Prepare the yoghurt sauce. Place the fennel, the radishes, the cucumbers, the juice and zest of a lemon, the salt, the ground white pepper, the mint, the yoghurt and the olive oil in a bowl. Mix very well and pour the sauce over the vegetables.
- Step 3: Serve with a few small wholewheat rusks.

- 1 lettuce (cut into large pieces)
- 1 iceberg (cut into strips)
- 1 radicchio (cut into strips)
- 1/2 bunch of fennel (finely chopped)
- 2 small cucumbers (finely chopped)
- 5 radishes (finely chopped)
- 300g strained yoghurt
- 50g extra virgin olive oil
- the juice & zest of 1 lemon
- flower of salt
- white pepper grains
- 1 tbsp mint
- a few small wholewheat rusks
