Cyclades

The Cyclades constitute the most famous group of islands of the Aegean Sea. The blue sea and the white-washed Cycladic houses, the beaches, the steep rocks, the volcanic soil, the naked landscapes, the bays adorned with fishing-boats with their fishermen often seen mending their nets after a hefty catch. Then there are the traditional island songs which invite you to dance to their characteristic rhythm, the ‘screaming’ seagulls overhead and other waterfowl, the archaeological sites, the beautifully decorated terraces and stone walls. The visitor is awe-struck by the magical sunsets, the vineyards and the olive trees which all together compose the austere, simple and at the same time breathtaking Cycladic scenery. The history of the Cycladic islands dates back to the Prehistoric era. The Proto- Cycladic Civilization was developed in the 3rd millennium BC along with the Proto-Minoan Civilization in Crete and the Proto-Hellenic Civilization in mainland Greece. Since ancient times, the Cycladic islands formed a channel for the expansion of trade and culture. The Cycladic islands are: Amorgos, Anafi, Andros, Antiparos, Delos, Donousa, Iraklia, Thirasia, Ios, Kea, Kimolos, Koyfonisia, Kythnos, Milos, Mykonos, Naxos, Paros, Santorini, Serifos, Sikinos, Sifnos, Syros, Schoinoysa, Tinos and Folegandros.

Nikos Asoutis

The island of Andros is not a typical Cycladic island: it is different in that it has abundant water resources, a fertile soil and abundant vegetation. Livestock farming, including mainly cows and goats, has always been a traditional occupation of local people. Nikos Asoutis studied at the Ioannina Cheese Production School. It therefore came as no surprise that he decided to make best use of the island's tradition in livestock farming. His family created a cheese dairy in the settlement known as Korthi, on Andros. Using milk produced mainly by their own cows, they offer a range of cheese with a strong local character and a special flavour. Their goal is to revive the special cheeses of the island, known for their intense, authentic taste.
