Step by Step Instructions
  • Step 1: Place the octopus in a saucepan with a little water and boil it on low heat together with the onions, olive oil and oregano, until tender.
  • Step 2: When it is almost ready, add the tomatoes, the rest of the water, the rice, nutmeg, salt and pepper and allow it all to simmer together.
  • Step 3: Serve in deep soup plates while it is still hot and garnish with the finely chopped parsley.

  • 1/2 kg onions - sliced
  • 100ml Extra virgin olive oil
  • Oregano
  • 1 pinch nutmeg

  • 200g Long grain white rice
  • Coarse salt

Octopus with rice is one of the most typical dishes of the islands of Ikaria, but also Paros, Samos and other Cyclades islands.  Known as an easy-to-make and very nourishing dish, thanks to the highly nutritional properties of the octopus, those being - Omega 3 fatty acids, B vitamins, minerals and trace elements.
