Step by Step Instructions
- Step 1: Prepare the vegetables. Place the aubergines, the zucchinis, the mushrooms and the peppers in a baking pan, sprinkle with salt and pepper, mix and set aside. Put the coriander, the ginger, the basil, the elixir and 6 tbsp of olive oil in a bowl and mix well. Pour the sauce over the vegetables and grill in preheated oven at 200°C for approximately 15 minutes, until the vegetables are cooked. Remove from the oven and set aside to cool.
- Step 2: Prepare the sauce. Drain the manouri cheese and place it in a bowl, break it as much as you can using a fork. Add the yoghurt, the salt, the pepper, the oregano and the 4 tbsp of olive oil and mix well, until the ingredients are combined into a sauce.
- Step 3: Prepare the square sandwiches. Lay the 4 slices of bread on a surface. Spread the sauce over them and then arrange the vegetables in any order you want. Spread the sauce over the other 4 slices of bread and cover the vegetables.
- Step 4: Cut each square sandwich diagonally and put one piece over the other matching the 3 corners. Prick them with a wooden skewer so that they stand in the plate and serve them.

- 10 tbsp extra virgin olive oil

- 1 tsp basil
- 1 tsp fresh ginger (grated)
- 1 tsp whole coriander (crushed)

- 150g strained yoghurt
- 1 tbsp oregano
