Step by Step Instructions
- Step 1: Prepare the chickpeas. Boil them in plenty of water and some salt for approximately 1 hour, until soft, but not to a pulp. Drain the chickpeas and rinse with plenty of cold water. Set aside to drain well.
- Step 2: Prepare the olive oil and lemon sauce. Pour the lemon juice in a jar with a lid, add the olive oil, the mustard, the dill, the oregano and the salt and pepper and shake well until all the ingredients are beautifully combined.
- Step 3: Prepare the salad. Put the chickpeas in a large bowl, add the spring onions, the peppers and the mushrooms. Pour the olive oil and lemon sauce over the salad. Mix well and refrigerate for approximately 1 hour, until all its flavours and aromas are combined.
