Step by Step Instructions
  • Step 1: Prepare the aubergines. Place the aubergines in a strainer, sprinkle them with salt and let them get rid of their juices and bitterness.
  • Step 2: Prepare the sauce. Heat the olive oil in a small saucepan. Place the onion, garlic and carrot in the saucepan and sauté for 5 minutes until they soften. After that, add the following ingredients: the finely chopped tomatoes, tomato paste, salt, pepper, sugar, vinegar, paprika, oregano and 1 glass of water. Cook on medium heat for about 20 minutes, until the sauce has thickened a bit.
  • Step 3: When the sauce is almost ready, rinse the aubergines and place them in the saucepan too. Make sure they are covered by the sauce and cook for another 20 minutes, until the aubergines are done.
  • Step 4: Serve the food hot or at room temperature.
