Step by Step Instructions
  • Step 1: Beat the butter very well until frothy and white, add the sugar and continue beating.
  • Step 2: Once the butter and sugar have been well combined, mix in the egg yolks, one at a time, the brandy and then the cinnamon. Continue beating and mix well.
  • Step 3: Add the almonds and the flour.
  • Step 4: Shape in rounds and bake at 180 °C, until golden brown. When cool, sprinkle with icing sugar.
  • Step 5: Arrange the shortbread biscuits in a tower on a round platter.

  • 250g caster sugar
  • 900g flour
  • 2tbsps of ground cinnamon
  • 1 espresso cup of brandy
  • 2kg icing sugar (for the coating)
