Step by Step Instructions
- Step 1: Cut the aubergines in 2cm cubes.
- Step 2: Heat the olive oil in a large frying pan and cook the aubergines on medium heat for about 10', mixing often until tender and golden brown.
- Step 3: Allow the aubergines to drain their excess oil on a kitchen roll before seasoning them with salt.
- Step 4: Put the aubergine cubes in a bowl, add the rest of the ingredients and pour the oil and lemon dressing over the salad.

- 1.5 lemon (zest and juice)
- 30g Capers
- 10 green olives without kernel
- 30g parsley (finely chopped)
- 10g onion (finely chopped)
- 5g garlic (finely chopped)
