Step by Step Instructions
  • Step 1: Prepare the omelette. Place the kavourmas in a frying pan and sauté for a few minutes until it turns golden brown and draws out its fat.
  • Step 2: Add the olive oil, heat for 1 minute and add the onion, the pepper, the cherry tomatoes and sauté for 4-5 minutes until they turn golden brown and soften.
  • Step 3: Put the eggs, the milk, the salt and the pepper in a bowl and beat with a whisk.
  • Step 4: Add the eggs into the frying pan and cook the omelette for 2-3 minutes until golden brown on both sides. Turn it over using a dish and do the same for the other side.
  • Step 5: Place the omelette on a plate and serve.

  • 200g buffalo kavourmas from Serres (cut into small pieces)
  • 1 green pepper (finely chopped)
  • 8 cherry tomatoes (cut in halves)
  • 1 small onion (finely chopped)
  • 3tbsp olive oil with orange
  • 4 eggs
  • 100ml milk
  • salt flakes from Kythira
  • ground black pepper
