Step by Step Instructions
- Step 1: Place all the ingredients in a mortar, except for the olive oil. Beat the ingredients with the pestle, to a pulp.
- Step 2: Add the olive oil and continue beating, until the mixture obtains a smooth texture.
- Step 3: Put the pesto sauce in a glass jar and refrigerate, making sure that the surface of the sauce is covered with olive oil.
- Step 4: Serve with bread sticks or potato chips, on boiled or baked potatoes, with roast chicken, or mix it with freshly boiled pasta as a delicious sauce.

- 100g oil matured gruyere cheese
