"Andritsena" sour frumenty is made with fresh sheep's milk which has been allowed to ferment and is known for its profoundly complex taste. It is highly nutritious, poor in calories, and low in fats. "Andritsena" sour trahanas (frumenty) tastes out of this world when served as soup. To spike it up, add crumbled feta cheese from the region of Arkadia and bits of syglino cured and smoked pork meat. Product History
Trachana is one of the most characteristic Greek products. Made of flour, milk and eggs it has a shape reminiscent of an irregular coarse grain. Traditionally the dough is handmade in coarse sieves, and is spread in trays with stainless steel mesh for it to dry well. The Greek frumenty is characterized by high nutritional value, low calories and fat.
