Product History
Tsipouro is served in small cups or glasses, neat and cool. It's usually enjoyed as an aperitif, a digestive and an accompaniment to heavy and spicy "meze" snacks (cheese, sausages etc). Tsipouro is a distillate entirely produced from grapes. The base of the drink is the pomace (skins, pips, stalks), which is left to ferment for a month for its sugars to turn into alcohol. Then the mixture is twice distilled in copper stills with the addition of various flavors (anise, fennel etc.) in quantities and proportions that are usually a secret of each producer. However there can also be found varieties of plain tsipouro without any other admixture. The distillation is divided into 3 parts: the first is called “head“, the second “heart“ and the third “queue“.

Archaeological findings testify that the Florina region has been inhabited since 6000 BC. During the classical era, it was under the administration of the royal house of Lyncestes, then under Roman occupation, the Byzantine Empire and, finally, under Ottoman rule. It was only in 1912 that it was liberated. The rich flora and fauna of the Prespes lakes, the forests with beeches, oak trees, firs and cedars, the small and larger rivers are only some of the treasures of the area. Visitors are awe-struck by the well-preserved traditional settlements, the mountains and gorges, the waterfalls and the natural hot water reservoirs.
