Product History
Extra virgin olive oil is the purest form of oil that comes straight from the olive trees, without having undergone industrial processing. It has a strong fruity taste and the distinct aroma of freshly cut olives. A pleasant bitterness and a short- term burning sensation in the esophagus can be present. With a striking 75% of Greek olive oil production to be extra virgin, Greece holds the first position worldwide in its production. Expressed in oleic acid, Extra Virgin Olive oil is the olive oil whose acidity does not exceed 0.8%. Acidity is one of the main criteria for the olive oil quality and the lower the acidity, the higher the quality.
Meet the producer: Ev Zin
Ev Zin
Daughter of olive oil producer N. Marigoudis, Maria Marigoudi decided to follow her father’s steps and enrich his dreams with new ideas and methods. «Ev zin» olive groves are located on the north side of Thassos island and consist solely of Throumba variety olive trees, a variety not so famous to the public for its excellent olive oil but mostly for the edible throumba olives. The olive oil is processed using traditional methods from harvesting the olives, carrying them on the same day to the olive mill, to the extraction of the olive oil «Ev zin» always had only one rule: Quality over quantity. In 2016 «Ev zin» started bottling its Extra Virgin Olive Oil for retail sale and in 2017 they had their first superior quality Early Harvest Green Extra Virgin Olive Oil. Harvesting was done mid to late October and its immediate first press cold extraction has secured a product for which «Ev zin» family is very proud of.

Thassos

Thassos, the island situated in the most northern part of the Aegean Sea, is characterized by its extraordinary landscape variations. Upon visiting Thasos, one admires the high mountains lushly ‘dressed’ in pinewoods, plane and chestnut trees and then, totally in contrast, sandy beaches with steep rocks, towering above the emerald-green sea. One can find picturesque villages adorning its mountains, and then fish villages, archaeological sites, marble quarries and olive groves all of which alternate in a wonderfully miraculous way. Looking into the history of Thassos, one finds out that it, too has a story to tell. It had been inhabited since the prehistoric era. It was colonized by the Phoenicians and later on, by the Parians. After that, it was inhabited by the Athenians, Spartans, Macedonians, Romans, Genoese, Venetians, Slavs, pirates and finally, the Ottomans until its liberation in 1912. The growth of the island relied not only on the abundance of raw materials it has, like, marble, iron and gold, but also, on agricultural products, such as olives and wine.
