Step by Step Instructions
  • Step 1: Prepare the carob bread. Pour 1 glass of water and the olive oil in a saucepan, and heat until lukewarm. Remove the saucepan from the heat and mix in the yeast. Mix well, until the yeast dissolves and set it aside.
  • Step 2: Place all three kinds of flour and salt in a large bowl. Mix well and add the yeast mixture. Start kneading, until the dough gets soft and pliable, while gradually adding the rest of the water (or as much as is required to make a soft dough).
  • Step 3: While kneading, mix in the bananas and raisins.
  • Step 4: Oil a rectangular baking pan (approx. 32cm x 26 cm) and spread the dough. Carve it and cover with a towel. Leave the bread in a warm environment, until the dough doubles in size.
  • Step 5: Bake in a preheated oven at 180°C for about 45 minutes, until the crust becomes hard and crispy. The bread should be light and come easily away from the sides of the baking pan. Remove the bread from the oven and let it cool on a cooling rack.
  • Step 6: Serve cool. When the bread has cooled, don't forget to wrap it in a kitchen towel.
