Product Description
Flomaria is the traditional pasta of the island of Lemnos: a local pasta product which is cut into very fine pieces. It is made with flour from Lemnos, fresh eggs and local sheep’s milk. In the past, kneading, spreading and cutting the dough to make flomaria was a reason for celebration. The housewives would gather together in their houses to make flomaria for each family, to sing, gossip and eat together. Cutting flomaria was an important element in determining a housewife’s skill. Flomaria were made during the summer months, so that they could dry properly. They were then stored away to be used in the cold winter months as a quick and hearty meal. Medium flomaria are ideally combined with rooster cooked with wine, partridge stew, shellfish and snail dishes.

Product History
In the old days, in the villages of Greece, pasta was usually made during the summer, when it was dried out in a natural way and kept in the house cellar in order to be served in the winter. It was considered one of the easiest food to make and a simple solution to feed a large and hungry family. Greek traditional pasta vary depending on the region, shape, size and way of cooking. Plain, with cheese, with some sauce on top, with meat, in soups or even in pies, pasta is a food that everyone enjoys no matter the recipe!

The company -"Hrysafis", was founded in Lemnos 28 years ago. It is a family business that passionately continues the island's rich culinary tradition.The company has selected the lily of the sea for its trademark, a typical and rare flower of the island of Lemnos. The Hrysafi family rediscover traditional recipes making best use of the unique raw materials generously provided by the local land, for instance: sheep and goat milk, flour from the local wheat variety, "mavragani," and fresh local eggs.The company -"HRYSAFI", uses the certified food safety management system EN ISO 22000:2005.At the same time, it has been in close collaboration with the “DEPARTMENT OF FOOD SCIENCE & NUTRITION" of the UNIVERSITY OF THE AEGEAN, on research and development issues, since 2009.  It is a multidimensional collaboration, including, among others, the implementation of approved research programs aimed at creating new innovative traditional products.

Today, the island continues its tradition in excellence crafting in addition to its premium wines, artisanal, PDO cheeses such as Kalathaki Lemnou and producing premium raw honey and “mavragani”, a semolina-like flour made from an ancient wheat variety locally farmed. Still the basis of Lemnos traditional fare, Lemnos wines, cheeses, honey, and mavragani-based pasta are now traveling throughout the world, acquiring enthusiasts, and drawing rave reviews for their Lemnos personality!
