Her spaghetti, kneaded only with semolina and water, is as good as any Italian spaghetti. Product History
In the old days, in the villages of Greece, pasta was usually made during the summer, when it was dried out in a natural way and kept in the house cellar in order to be served in the winter. It was considered one of the easiest food to make and a simple solution to feed a large and hungry family. Greek traditional pasta vary depending on the region, shape, size and way of cooking. Plain, with cheese, with some sauce on top, with meat, in soups or even in pies, pasta is a food that everyone enjoys no matter the recipe!

Spanelli

Stavroula Spanelli and her family have created a workshop for the production of traditional pasta in Giannena. Using the traditional recipes from Epirus and the purest of ingredients from the area, along with their passion and love for pasta-making, they prepare home-made pasta, without artificial colouring and preservatives – regular pasta of excellent flavour, as well as pasta kneaded with fresh vegetables and herbs.

The history of the prefecture of Ioannina dates back to the Palaeolithic era (33000 - 8000 BC). Passing through the hands of various conquerors, during the 18th-19th century, Ioannina witnessed a great deal of intellectual, economic and cultural growth, thus promoting the educational level and its development. The high mountain ranges and canyons, the rapidly rushing rivers, the dark lakes, the mountainous villages and the stone bridges form a wild and natural landscape which is rich in colour and irregular forms – similar to that of a most beautiful mosaic.
